Today’s dinner was crispy fried Alaska pollock fish by @LidlGB coated in a spiced gram flour batter, served with roasted sweet potatoes and simple vegetables. The fish was first marinated in fresh lemon juice, ajwain, and garlic granules to add a light tangy flavour. For the batter, I mixed gram flour (besan) with ajwain, salt, red chilli powder, turmeric, cumin, coriander, chilli flakes, black pepper, and a little corn flour, then added water to make a smooth medium-thin batter. Each piece of f
